Trout fillets in a sweet onion relish. The trout is farmed sustainably on a small scale in Portugal, and worked with fresh by the artisans at the ABC+ cannery. The onion relish, infused with aromatic spices, is inspired by Indian chutneys and is a richly flavoured complement to the rainbow trout.
