Pole and line caught tuna from Olasagasti. A delicately textured, meaty white tuna in wine vinegar and olive oil. Olasagasti, a cannery in the Basque Country in Spain, works with all its tuna fresh which enhances the flavour. The Bonito del Norte or Albacore is MSC-certified and fished in the Bay of Biscay in the summer months when it is at its peak.
