Line-caught tuna in olive oil spiked with Espelette pepper from the Basque-based cannery Zallo. The spicy peppers are named after the French Basque village they are native to. These fillets go well on top of a cold potato salad, or enrich a tomato, garlic and onion pasta sauce with the tuna and some of the spiced oil.
