A tin of ventresca in Jersey butter and a ceramic plate.
A tin of the finest ventresca in Jersey butter by Los Peperetes. The tuna belly is the silken-textured prime cut of the fish, full of flavour and meltingly tender. The albacore tuna is caught seasonally just off the coast of the Cantabrian Sea and therefore takes the name Bonito del Norte; the rich butter it is packed in is from the nearby artisanal dairy Airas Moniz, made from the cream from its herd of Jersey cows.
The tin is accompanied with an illustrated ceramic plate, created especially for us by Madrid-based artisanal ceramicist Chichinabo Inc.
