Surimi eels with garlic sauce
Enjoy baby eels or elvers in a sustainable way. These elvers (angulas in Spanish) are made from Surimi, a natural fish paste found in Asian cuisine made from abundant white fish. Angulas are a popular Spanish tapas, especially in the Basque Country. Make angulas a la bilbaína — named after Basque city Bilbao - with these. Sauté thinly sliced garlic in olive oil, add a chopped chilli pepper and the drained elvers and heat through or scatter them warm or cold over salads.
